Mashed Butternut Squash with Goat Cheese and Rosemary
serves 4
Ingredients
- 1 1/2 lbs butternut squash, cubed
- 3 oz goat cheese
- 2 T milk
- 1 T fresh rosemary, minced
Instructions
- Boil the squash in lightly salted water until fully soft. Drain, then puree in a blender with the remaining ingredients. Season to taste.
- Plate and serve hot.
